    Favorite Cafeteria Recipes

    Spinach Madeleine

    2 pkgs Frozen chopped spinach
    ½ stick Margarine
    3 tblsp Flour
    ½ cup Diced onions
    1 can Evaporated milk
    ½ cup Vegetable juice (drained juice from spinach)
    1 tsp Black pepper
    1 tsp Celery salt
    1 tsp Garlic salt
    1 tsp Salt
    8 oz Swiss cheese
    1 tsp Worcestershire
    To taste Cayenne pepper

    Cook spinach and drain well. Melt margarine. Slowly add the flour stirring constantly until mixed well with no lumps. Add chopped onions and cook until soft. Slowly add milk and vegetable juice, stirring constantly while it thickens. Add seasonings, cheese and cooked spinach and mix well. Pour into a greased casserole dish. Sprinkle with Italian breadcrumbs and bake at 325 degrees for 20 to 30 minutes.

    John Wayne Casserole

    2 lbs Ground Beef
    2 cups Sour cream
    1 cup Mayonnaise
    1 cup Diced onions
    1 pkg Biscuiit mix (small pack of Bisquick)
    4 each Fresh tomatoes
    ½ cup Diced green peppers
    2 pkgs Taco seasoning
    ½ cup Jalapeno peppers
    3 cups Shredded cheddar cheese

    Brown ground beef and drain fat. Mix in taco seasoning. In separate bowl mix sour cream, mayonnaise, ½ of the cheddar cheese and chopped onion. Mix the biscuit mix following package directions. Lightly grease a casserole dish and press biscuit dough in the bottom of the dish to ½ inch depth. Layer ground beef, sliced tomatoes, chopped bell pepper and diced jalapenos. Spread mayonnaise mixture on top. Finish off with the remaining shredded cheese. Bake at 350 degrees for 25-35 minutes until the crust is light brown.
